Inhibitory effect of thiol compounds on browning precursors and intermediates in sorbitol/glycine system.

Glutathione and cysteine directly inhibited the production of substrates in the sorbitol/glycine system, reduced glucose accumulation through competitive consumption, and captured highly active intermediates through sulfhydryl groups.
